Charcuterie

We have excellent Italian, Spanish and French charcuterie.  They make a wonderful platter of different tastes, textures and aromas and are perfect for a picnic. We can help you put together a selection of hams, like the smoked Speck or Coppa, both marinated and air dried, as well as prosciutto and fennel flavoured salami.  From the hills south of Rome, Porchetta, boned, stuffed and rolled suckling pig, roasted until the  crackling is burnished gold while the flesh is still moist. 

We have Teruel ham, the only Serrano ham with its own Denominacion de Origen, deep red brick in colour, with a pronounced flavour and firm texture.  Try juicy and deep-flavoured goose and wild boar or blackcherry and saffron salamis. 

Spanish Lomo, pork loin rubbed with paprika before curing, is succulent and sweet.  Chorizo, either cured for slicing (cold platters and pizza toppings) or for cooking (especially good on the barbeque). The chorizo for cooking give depth of flavour to stews, rice dishes and compliments some fish dishes beautifully.  We have milder cocktail-sized chorizo sausages, paprika coated pancetta and from the north of Spain, bellota (acorn-fed) salami.
