We source British cheese from Neal’s Yard Dairy and our European cheese comes from La Fromagerie and La Credenza, all based in London (so no need to go uptown to find the best cheese).
These cheesemongers employ an affineur (cheese maturer) who takes delivery of fresh, youthful cheese and by his knowledge, patience and individuality, brings it to maturity and ripeness. Under his guidance, what might have been a very nice but unassuming cheese becomes the flavourful, fragrant cheese we sell.
It’s so easy to make cheese part of a meal, either by cooking it in a sauce, crumbling into soup, or washing the crust of a mini boxed Vacherin with a fruity wine and warming in the oven to scoop out with a spoon at the table. Try sprinkling crumbly fresh goat’s cheese like Chabichou from Poitou on summer salads or grilled vegetables. In summer the combination of juicy, ripe peaches or English cherries with fresh goats’ cheese is delicious.
